Why you should professionally sharpen your kitchen knives!

To achieve the perfect cut, you need a sharp knife. Once a knife becomes dull, it’s completely useless until it’s resharpened. That’s why it’s worth having your knives professionally sharpened, even if it sounds like an unnecessary luxury expense for you. If you have good knives, you probably invested a decent amount of money in them and want them to perform like they did the day you bought them. Most people lack the skills and equipment necessary to put a new edge on a knife and sharpen it so that it cuts effortlessly.

Knife Sharpening and Restoration Services

An expertly sharpened knife makes kitchen tasks so much easier. A dull knife leaves the cook or chef the chore of sawing and tearing through food, which is undesirable in both appearance and effort. Sharp knives cut more smoothly, and they are actually safer than dull blades because only minimum pressure needs to be applied. And let’s face it. Sharp knives are more fun to work with.

There are two different techniques to maintain your knives.

1. Honing. If you own a quality knife set, it likely came with a honing steel (or honing rod). Unlike sharpening, honing doesn't remove any metal fibers. Instead, the friction caused by running your blade along the surface of a honing steel helps straighten and align metal fibers on the knife's edge that get bent during the cutting process. Without honing, your knife's edge will quickly become dull.

2. Sharpening. Sharpening is a technique that takes a small amount of material off the blade to create a new, sharper edge. Yes, with a bit of training, the right tools, and a lot of practice, you might be able to sharpen your knives to a certain degree at home. However, to restore your knives to “like new” condition, you need a highly skilled professional. A professionally trained knife smith can assess the correct angle for your knife’s bevel edge. They will ensure the least amount possible is going to be taken off the blade, prolonging your knife’s lifespan. Any dents or burrs are taken out of the blade with this technique.

When to hone and when to sharpen a knife

You use a sharpening steel to sharpen a blunt knife, and you use a honing steel to hone the edge of your sharp knife. A professionally sharpened knife cuts better, stays sharp for longer, and is easier to keep sharp once the blade starts to get dull again.

Knives need professional sharpening about once or twice a year, depending on how much you use them. It’s hard to find a local knife sharpener.
